Homemade Ice Cream Sandwiches

Cool off with a quintessential childhood favorite, Homemade Ice Cream Sandwiches.

Stay inside and get your kids in the kitchen to have some summertime fun.

Home Made Ice Cream Sandwiches
1 quart vanilla ice cream
1 dozen fresh baked or store bought cookies
1 package candy sprinkles or mini chocolate chips

Let Ice cream sit at room temperature for about 10 minutes to soften. Place a scoop of ice cream on 6 cookies. Place second cookie on top creating a sandwich. Roll sides of ice cream sandwiches in candy sprinkles. Wrap each sandwich in waxed or parchment paper and return to the freezer for 1-2 hours to harden. Serves 6
