Cook Once, Eat Twice

October is one of my favorite months, bright orange pumpkins perched on doorsteps, the gorgeous red to gold tones of the leaves as they began to turn against the cerulean sky. Fall is here and the joyous holiday season has begun!
As outside temperatures began to cool, schedules are really heating up with no sign of a slow down until January. These busy months can be especially difficult to plan and prepare meals, so for October; Around the Table will be presenting Cook Once Eat Twice.
Each Monday in October I’ll be offering recipes that give you the option to cook one time and with some repurposing of ingredients, you’ll have 2 meals for your table! Each one of these dual duty recipes are so tasty they can stand on their own.
Getting dinner on the table night after night can be a challenge, so use the strategy I’ve used in my kitchen for years, Cook Once, Eat Twice!
