Simple and sensational, my recipe for easy pumpkin muffins starts with a yellow cake mix so there is very little measuring. Bake some up today, you’ll be glad you did!
Pumpkin Walnut Muffins
1 boxed yellow cake mix
1 15 ounce can of pumpkin puree
¼ cup melted butter
1 cup chopped walnuts
1 teaspoon cinnamon
1/4 teaspoon all spice
1 teaspoon vanilla
Preheat oven to 350 degrees. Line 2 muffin tins with paper liners. Mix all ingredients in a bowl until smooth. Fill muffin tins using a kitchen scoop. Bake for 22-28 minutes until toothpick inserted comes out clean. Yields 24 muffins
Tip: If your muffins are coming out tough, you may be over mixing your batter. Mix until just combined.
