Summer Schedule/Summer Salad

Can you believe it is already time to think about SUMMER?  I have posted my summer class schedule for children and cannot wait to get the kiddos in the kitchen!  I have also added a few dates for adults getting us into early fall.  I am especially excited about my Adult 3 Day French Cooking Workshop in September.  Scroll to the bottom for the recipe for one of my favorite new salads, It is a Mediterranean blend, sweet, crispy and crave able!

Summer Classes 2016 Slice of Heaven Cooking School

ADULT Magnificent Macaroons Thursday, June 9th 6:30-9:00

Macarons, the quintessential French treat, light, delicate and irresistible! After studding macaron making in Paris, Lorie will lead a hands on class using tried and true French techniques. We will first toast the macaroon with a flute of bubbly before diving in to make this love at first bite treat.  Each step of the process will be clearly defined so students can replicate the process in their own kitchens with success!  We will prepare the classic French flavors; Vanilla Bean with Swiss buttercream filling, Raspberry filled with Raspberry Buttercream, and my personal favorite, Pistachio with a Pistachio Buttercream filling.  Recipes for other macaron flavors will be shared. Delight in creative packaging ideas and take home treats to share. Class size is limited to 10, book early!  Class fee class fee $58.00

June 21-23rd 11:00-1:30 Cooking for Real 3 Day Camp Ages 9-14

3 Day cooking camp for kids that want to learn how to COOK FOR REAL!   Kids will learn real time cooking skills using fresh ingredients, (no prepackaged food) including sautéing, simmering, roasting and baking skills.  Kids will be heavily supervised as they learn to use kitchen equipment including cook top, oven, and electric mixer; blender and knife skills.  Important life lessons will be taught such as cleanliness, nutrition, food storage and selection of produce. We work our way through Breakfast lunch and dinner each day with a few extras just for FUN!  At the end of this camp your chef will be able to translate acquired skills to prepare most any moderate recipe.  Kids will bring a To Go Box to camp; any food not eaten can be taken home to share.  Let your kids learn to cook with ME! $138.00. Our Crispy Baked Chicken is the perfect stuffing for hot rolls and for a crunchy element Delicious crunchy Veggie Slaw

Kids will go crazy for my award winning Copper Pot Chili and baked in a jar with a Corn Muffin baked right on top!

To celebrate our time together we will finish with a gigantic Chocolate Chip Cookie Cake topped with ice cream, Chocolate Sauce and Strawberry Sauce made from scratch of course!

Wednesday, June 29th 10:00-11:30 Manners and Mealtime Ages 4-6

My tiniest tikes will have a ball as we talk manners and cook.  A lighthearted approach will be taken as we cover a few basics that will help your youngster with table time.  Cooking REAL food is fun for tots so the class will begin with charming Teddy Bear Toast.  Little ones will love making crispy Chicken Nuggets, Creamy Mashed Potatoes, and yummy Cinnamon Glazed Carrots.  Blueberry Wands will let them practice using fine motor skills and for a sweet chocolate finish, delicious S’mores Brownie Bake.  Class FEE $28.00 Register by email loriefan@tx.rr.com or call/text 214 551 9630

Wednesday, June 29th12:30-3:00  Cooking and Etiquette for KIDS! Ages 7-13

Having excellent manners is a great way to build your child’s self-esteem.  When you are at your personal best, you feel great about yourself!  This class will take a lighthearted, game style approach to manners while we cook up a fabulous meal to sit down and practice our newfound skills. July 6th and 7th 3:30-6:30  TEENS Italian Cooking  Ages 13-17

Join me for a 2 day cooking workshop designed to cover the basics and offer up classic recipes that will stay with your teen for a lifetime.  In this hands on cooking class teens will take charge of the prep and really work these recipes.  We will use all fresh food, learn how to choose and use produce, skills will be learned to make insure food is always flavorful and delicious. Teens will be able to translate skills learned to most any recipe.

Day 1      

Slow Simmered Red Sauce made from Garden tomatoes will be a classic sauce that can be applied in a variety of recipes.  This classic sauce will be used both days; on day one with Tender juicy Meat Balls and Spaghetti. 

Fettucine Alfredo is a Sauce that can make even the most experienced chef nervous, but not with my fool proof method…success!

Balsamic Reduction will make our Caprese Salad pop

Tartufo, Ice cream balls with a cherry in the center, rolled in cookie crumbs and coated with chocolate will be super fun to make and eat

Day 2

Italian Salad is a classic every chef should know

Herb and Garlic Monkey Bread

We will prepare Homemade Ricotta Cheese to be used on our mile high Traditional Lasagna

Grilled Italian Vegetables are caramelized for natural sweetness

Panini is a great way to get Italian flavors to the table fast and we will enjoy ours!

Teens will craft Pizzelle Tacos to be stuffed with fruit and Chantilly Cream

July 7th 11:00-1:00Cooking For Real Tex Mex is the BEST!  Ages 7-12

Kids really can make delicious food for themselves AND the family!  Children will learn real time cooking skills using fresh ingredients, no prepackaged food. The fun will begin with amazing Breakfast Quesadillas stuffed with bacon, eggs, cheese and veggie goodness.  Fabulous creamy Vanilla Dip made for ripe and ready fruit.  Chicken Enchiladas are lean and an amazing crowd pleaser especially when served with Mexican Skillet Corn bursting with natural sweetness.  Tortilla Soup is a classic Mexican dish and kids will gobble it up.  Bean Dip is surprisingly easy to make and packed with protein making it a wonderful snack.  We will also cover Guacamole another fantastic snack or Mexican side.  For a sweet finish we will bake up delicious and chewy Cinnamon Cookies and we will turn them into the most beautiful Ice Cream Sandwiches. July 13th-15th 10:30-2:00  Master Chef Class Ages 10-16

Is your child serious about cooking?  For the second year in a row I am offering a unique experience for kids with a genuine interest in cooking.  Class will be limited to 8 students.  Each student will be set up on a station and will prep and prepare dishes from beginning to completion.  Breads and sauces will be prepared together and shared.  Each student will be encouraged to invite 1 guest to lunch on the last day of class. Our guests will be served by the students.  At the end of each day utensils and stations will be returned to original order before leaving class. Knife Skills are a prerequisite, if your child has not taken knife skills with me, they can come 30 minutes early the first day for an additional 15$ fee.  Class is limited to 8 students.  3 day camp including guest for lunch $225.00

Tuesday,  August 2nd 12:30-3:00 Cooking 4 Real Ages 9-14

Kids really can make delicious food for themselves AND the family!  Children will learn real time cooking skills using fresh ingredients, no prepackaged food. The fun will begin with an amazing breakfast treat, Cinnamon Crumb Cake.  Kids need energy so to keep them at the top of their game we will prepare No Bake Energy Bites.  We will craft a beautiful Veggie Platter giving us lots of opportunity to practice knife skills and of course a creamy Dip to make it super fun. Kids love Bread Sticks, ours will be stuffed with Cheese and dipped in Fresh homemade Marinara Sauce.  Chicken Pot Pie made from scratch is out of this world, kids love to bake things in jars so why not?  Kids will use artistic skills to craft graham crackers with an Undersea Scene for a “Hey Mom look what I made moment!” To complete e the day of cooking fun we will prepare a Gigantic Sugar Cookie cake topped with edible colorful confetti.  A Cheftagious good time will be had by all. ADULT 3 Day French Workshop September 13th-15th 10:00-1:30

Looking to expand you cooking knowledge or just your recipe repertoire?  If so join me for 3 days of cooking fun that will do just that.  In French Food Workshop I you will travel the county of France as we prepare time honored classics.  Cooking techniques that can be applied to most any recipe will be taught as we prepare 3 meals each day.  We will cook and enjoy breakfast and lunch together and a single portion of the dinner offering will be packed home to enjoy in the evening hours.

Two of the five French mother sauces, Hollandaise and Veloute are included in this workshop, three timeless and irresistible desserts as well as French Bread and fresh churned European style butter.   We will make our own Herbs de Provence to be used in our recipes.  Class is limited to 10 participants.  Class Fee $232.00

Day 1

Breakfast is the most important meal of the day and ours will be puffy golden brown Pain Perdue served with freshly made sweet Strawberry Jam.  Tomato Basil Soufflés will rise to amazing heights for lunch along with a Fall Salad made from the perfect combination of pears blue cheese and walnuts.  For dinner we will prepare rich and satisfying Daube de Boeuf Provencal a lovely hearty beef stew.  For dessert we will concoct dreamy Coconut Crème Brulee.

Day 2

We will start our day with the tasty simplicity of Cherry Clafouti.  For lunch we will learn to make the perfect Buckwheat Crepes and luscious Hollandaise Sauce; they come together to create Asparagus and Ham Crepes. We will head to the Basque region of France to concoct a dinner that is sure to become a favorite recipe.  Bell pepper, onions and tomatoes are slow cooked with chicken to become Poulet Basquaise.  For dessert Strawberry Jam will be used to fill sweet and crumbly Gateau Basque

Day 3

Breakfast will be extraordinary Soufflé Omelet with herbs and Gruyere cheese.  We will enjoy fresh baked French Bread and Churned Butter with lunch of my all-time favorite Coquilles Saint Jacques.  For Coquilles we will learn the second of our sauces, Veloute.  Dinner will be slow cooked, satisfying Cassoulet with Kielbasa Sausage and Bacon.  As a celebration of our last day together we will prepare and enjoy the gorgeous Apple Almandine Tart.

ADULT Viennoiserie Thursday, October 27th 6:30-9:00

Viennoiserie, the exquisite dough used in classic French Pastries including Croissant, Pain Chocolate and Almond Croissant will be learned.   After studding Viennoiserie at Le Cordon Bleu in Paris, Lorie will lead you in hands on instruction where you will learn to make this classic French dough.  We will toast the French with bubbly before we get started.  Viennoiserie is an art form but with Lorie’s straight forward techniques and ample hands on exposure, you will become an expert!  Buttery flaky croissants, Pain Chocolate stuffed with bricks of chocolate and luscious Almond Croissant filled with Almond Custard will be taught, tasted and packed up for take home! Class size is limited to 10 Class fee $58.00

Cucumber Tomato Fennel Salad

1 pint heirloom cherry tomatoes quartered

1 bulb fennel cut into julienne with fronds reserved

1 English cucumber peeled and cut into ½ inch chunks

2 teaspoons lemon juice

2 tablespoons olive oil

1 teaspoon apple cider or elderflower vinegar

Salt and pepper to taste

Mix all ingredients in a bowl and let sit at room temperature for about 20 minutes before serving.  Add fennel fronds as a garnish.
